Hi! I'm Katherine.

I've always had a passion for food. Back in 2010, I started this blog to document my experiences with food + share recipes with friends.

Enjoy!

I made these last night for my visit to Moxley Carmichael. What a big move you all had relocating, but it looks great! It was also great to see everyone! I stuck with something sweet and chocolaty, listening to Rachel's request. I noticed last night that cutting corners while baking isn't the best idea.. First I got tired of looking for the 9x13 pan. When the directions say use a 9x13 pan, DO IT! Also, I won't lie... I wasted 2 eggs and some flour in the process, accidently cracking BOTH into the wrong bowl. Sorry Mom & Dad... ( & don't worry, I started over). Other than that, they turned out great!  I hope you all enjoyed the treats! Glad to see you all.

Crust:

1/2 cup butter

1 ounce unsweetened chocolate

1 cup all-purpose flour

1 teaspoon baking powder

2 large eggs

1 cup sugar

1 teaspoon pure vanilla extract

1/2 cup chopped nuts

Melt butter and chocolate; cool. Sift together flour and baking powder. In medium bowl, beat eggs, sugar and vanilla. Add chocolate mixture to eggs, beating well. Add flour mixture and nuts. Spread in buttered 9x13 inch pan; set aside.

Filling:

6 ounces cream cheese, softened

4 tablespoons butter, softened

1/2 cup sugar

1 large egg

1/2 teaspoon pure vanilla extract

2 tablespoons all-purpose flour

1/4 chopped nuts

6 ounces semisweet chocolate chips

2 cups miniature marshmallows

Beat together cream cheese, butter and sugar until fluffy. Add egg, vanilla flour. Beat well. Stir in nuts and spread batter over unbaked crust. Sprinkle with chocolate chips. Bake at 350 degrees for 30-35 minutes. Remove from oven and sprinkle with marshmallows. Return to oven for 2 minutes.

Frosting:

4 tablespoons butter

1 ounce unsweetened chocolate

2 ounces cream cheese

1/4 cup whole milk

1 teaspoon pure vanilla extract

3 cups powdered sugar

Melt together butter and chocolate; cool. Add cream cheese, milk vanilla and powdered sugar and beat until smooth. Spread over marshmallow layer. Cool and cut into bars.
